The nose displays plenty of distillery character as the finishing cask isn’t first fiull. Briny with herbal/ medicinal peat, apricot, vanilla toffee, and subtle, very subtly grapey dried fruit, green olives, nuts, toasted sultana and warm spice.
The palate opens with dried apricot, apple and a touch of toffee. The briny and medicinal peat moves in along with a touch green olives. Again very subtle on the cask influence and a long, intense, briny, sooty finish with lingering oily fruit, toffee, coffee and herbal spirit notes.
Water makes the nose less briny and emphasises the oils. There’s a little more sherry character with nutty and toasty oak notes. Less peat but more salt and citrus. The palate is also fuller and richer with more barley and fleshy fruit. Again less peat and a little more sherry – grapey dried fruit and green nuts. The peat although lessened has become sweeter and feels like it has been liberally coated in marmalade. Lovely juicy finish and a sublime balance.
