An intense, earthy, almost Mezcal-like nose of white fruit, barley, gooseberry, lime and minerals. Hints of creamy American oak, which doesn’t overpower the spirit character. With time a touch of French oak tannins and wood smoke appears.
The palate opens with soft apricot and again, some slightly astringent Mezcal-esque white fruit and a touch of green fruit, green barley, lime and minerals. Again, the creamy oak is quite subtle and there’s a playful taught French oak note. Very botanical middle with a touch of winey dried fruit. Long with the creamy oak now coming through along with wood spice, earth and vanilla.
