The nose kicks off with earthy, ashy peat and a subtle honeyed, winey sweetness. As it opens up creosote, tar, medinal peat, bog myrtle and coastal notes appear. Quite restrained by Octomore standards, but them it is only 96.9PPM! Late fragrant barley.
The palate opens with the honeyed, winey, sweet, late harvested fruit and earthy peat. Subtle medicinal peat, iodine and salt follows along with some intensifying, grippy tannins and alcohol enhanced spices. The alcohol is well contained and balances the Sauternes sweetness aloght the sweetness outlasts the alcohol on the finish. Good length with an earthy, spicy tannic finish and an iodine/ TCP after-taste.
Water emphasises the sauternes cask and barley whilst lessening the peat a little. It also brings out crystalised orange, lemon and apricot notes. On the palate the peat is also lessened, which emphasises the barley and milky American oak. A little bitter green fruit appears on the middle along with bog myrtle and more salt. Bracing finish.
