Lindores Abbey
‘Thiron’ 2024 Release 49.4%
This bottling is the inaugural release in a series of annual releases using their ‘Thiron’ French Virgin Oak Casks (pronounced ‘tee-ron’), exclusive to Lindores Abbey Distillery, hewn from the forests of the French Abbey & village of Thiron-Gardais.
Lindores Abbey was founded by monks from Thiron in 1191 and our centuries-old bond remains strong to this day. In 2018, Lindores Abbey Distillery founders, Drew and Helen McKenzie Smith, commissioned a number of casks to be created from the French oak trees that grow in the forests around the village of Thiron-Gardais, a unique opportunity available only to Lindores. Drew and Helen have since returned to Thiron to plant oak trees to replace the ones we have used.
The nose opens with buttery and toasty vanilla along with noticeable, grippy/ spicy French oak tannins. Sweet white fruit, apricot and barley come through and finally some subtle straw, redcurrant, citrus and wood smoke.
The palate opens with the grippy French oak and citrus, followed by supple tannins, sweet vanilla ice cream, barely and straw. It continues citric and mineral with supple red fruit appearing on the middle. Good length, slightly hoppy and barley’d finish with lingering slightly oily spirit.
