A fresh and salty nose with stewed apricot, malt, fish oils, barley and crisp white fruit. The lack of any sherry influence really allows the oily maturity of the spirit to shine. With time a subtle rummy dried fruit character appears bringing raisin, sultana, apricot and slightly gritty wood spice.
The palate is full and generous with a touch more rum character. Hints of tar, liquorice, molasses and malt follow and mingle beautifully with the rummy dried fruit. Very malty on the middle with violets, dusty spice, dusty peat, earth, fish oils and a subtle menthol note. Intensely coffee’d and spicy finish the gritty tannins emerging along with a touch of dark chocolate and darker dried fruit.
