White Peak Distillery
Max Vaughan said “In mid-2016 we had no premises, no partners or staff, no permits or consents, nowhere near enough funding and no track record in the drinks & spirits industry. But I had a dream that I’d been carrying for years, of making whisky and other spirits in Derbyshire.”
Fast forward to February 2022 and all those boxes had well and truly been ticked and the first Derbyshire single malt whisky had been released. The distillery was now housed in the former Johnson & Nephew Wire Works, nestled amongst the woodlands on the banks of the River Derwent. They have attempted to keep as much as the process as possible on site and local.
The mashing both unpeated malt and malt peated to 6PPM is done onsite. The wort sees a moderately long fermentation of 96 hours and uses live yeast from a local Derbyshire brewery. The resulting spirit if barley accented and subtly fruity. The currently releases feature a fairly large proportion of the spirit aged in ex-STR wine casks, but as the spirit mature that proportion will inevitably decrease.
Although there is generally a fierce rivalry between Nottingham and Derby, one thing we can agree on is that Derbyshire makes exceptionally good whisky!
