There is an intense alcohol prickle on the nose but a lovely dense intensity of toasty vanilla oak, white fruit and cereal. The oak becomes quite pronounced with time and develops a freshy sawn wood character. However, the spirit itself has a good, fresh salinity, which adds balance.
The palate opens with the grippy oak, vanilla and sawn wood notes that were found on the nose. Apricot, apple, toast, rye spice and salt follow. The middle is very salty. Masked, slightly spirity finish with lingering new make notes.
Diluted the nose is fuller, fruitier and fleshier. The barley and fruit has a lovely sweetness and the oak is also subtler. It’s still salty but a little more aromatic now. The palate also displays less oak and more fleshy fruit and a touch of honey. The American oak tannins do come through on the middle along with the vanilla, but they are less grippy and softer. Still salty and still a little masked with a bitter rye spice and toasted toffee finish.
