10 year old unpeated spirits aged in a combination of Bourbon Casks and Paul Launois Barriques.

A lovely nose of fresh, crisp, straw-like barley with hints of toasty French oak, pot pourri petals and subtle wood smoke. With time apricot, honey coated apple, vanilla crème, grilled nuts and leesy/ winey notes. Very complex with a touch of wheat flakes and tangy citrus.
The palate displays weighty’ oily spirit, honey, minerals and leesy/ winey notes. The honey builds along with some subtle wood smoke and pot pourri petals. Slightly biscuity and malty middle with macerated apricot and wood spice. Intense, grippy, subtly spiced finish with lingering youthful rose petal, minerals and a touch of raspberry in the after-taste.
Water brings out more buttery oak, but not too much! A little fresher, possibly with floral barley and more noticeable champagne notes. The palate is still oily but frutier, still leesy and maybe feeling a little younger. The finish is still quite grippy with plenty of wood smoke, walnut shell, dusty tannin and spice
