A lovely nose of exuberant vanilla oak and seriously juicy apricot, pear, apple and banana with hints of barley, honey and some tighter oak tannins from the quarter casks. Gently salted with hints of wood spice and an earth.
The palate is full and barley, with not as much oak as you would expect, however the oak tannins are pretty taught and take the edge of the fruit a little. Becomes quite creamy and vanilla’d on the middle with developing wood spice. Long and a little dry with some lovely flecks of salt and cinnamon.
Water softens the nose and emphasises the creaminess of the oak, a little butter and white chocolate can also be detected. On the palate it actually brings forward the juicy fruit and emphasises the citrus. Wonderfully honeyed middle now and the wood spices on the finish have softened too. Although there is a lot of oak, the malt definitely stands up to it!
