A pleasantly balanced nose that shows gristy barley, greengage, gooseberry and tight, herbal sherried dried fruit. A little high toned but that down to the high abv.

The palate is quite barley’d and fruity with subtle sherried dried fruit. Crisp, citric middle and a masked finish that shows a little earthy/ dunnage character and tannic wood spice.

Water makes the nose softer and creamier with more barley and less sherry. Some aromatic apricot, apple and lemon appears along with straw, grilled nuts and castor sugar. The palate is softer and juicier with lemon, apple, white grape, apricot and barley. Again the sherry is nuttier and less prominent. Long and fruituy with Clementine, minerals and honey in the finish.
