Lightly peated spirit aged in ex-Bourbon before being finished for 8 months in Thornbridge Brewery Stout Casks (which previously held PX Sherry)

The nose opens with the soft, chocolaty stout and treacle notes along with a touch of vanilla. Some barley and estery apple, apricot and pear appears along with a touch of soft spices and grippy tannins. Late earthy peat, dark malt and raisinated fruit.
The palate is malty and barley’d with slightly edgy, chocolaty and treacly stouty notes. Very noticeable alcohol which really emphasises the spices. Like the nose the re is some lightly estery fruit beneath and a little peat. Masked but continuing spicy and slightly tannic. Floral barley after-taste.
Water emphasises the stout and sweet malt on the nose, sweetens the barley but tempers the peat and spice. On the palate however, it emphasises the barley and lessens the stout, peat and spice. Rounded but still a little tannic on the finish, but the spices return.
